Sized between a chef's knife and a paring knife, it features a narrower, straighter blade. This knife is perfect for medium-sized tasks. It utilizes Shun's Composite Blade Technology, combining high-performance VG10 steel at the cutting edge with highly corrosion-resistant Japanese 420J stainless steel on the blade’s upper section. The blade’s san mai construction protects and supports the VG10 core, with a razor-sharp 16° single-bevel edge that ensures quick, smooth cuts. Its traditional handle is made from a durable PP/TPE polymer blend, offering a modern look, secure grip, and easy maintenance. The blade's full tang extends to the handle's embossed medallion, providing excellent strength and balance.
